Apera Fine Sweet (formerly Cream Sherry) is made predominantly from Pedro Ximines, a Spanish grape variety grown on 2.46 hectares at Sevenhill Cellars. (The Australian wine industry has adopted the word, Apera, to replace Sherry, which cannot be used because it defines a Spanish wine region.
Apera is a blended wine of several years, not a single vintage, which has been matured in large old oak barrels. Fruit is picked towards the end of vintage when grape sugar levels are high with intense flavours. Fermentation is carried out to dryness and spirit is added under the fortification process.
Apera Fine Sweet is golden amber in colour. One the nose, there are aromas of dried fruit and nuts. The palate is rich and creamy, with flavours of caramel and toasted almonds.
