The 2018 St Ignatius is a blend of Cabernet Sauvignon (50%), Merlot (26%), Malbec (14%) and Cabernet Franc (10%). All four varieties are crushed into open slate fermenters where they stay on skins for 12-14 days, with gentle hand plunging three times a day. After basket pressing, ageing was undertaken in a combination of old and new French oak.
Made from Sevenhill's estate grown fruit, it is marked by aromas of violets, bramble and cigar box, along with bright red berry flavours. It's intense varietal characters seamlessly integrate with the premium French oak.Â
